Hosting Singita’s Top Chefs For an Exceptional Day in Cape Town.

Singita Luxury African Safari Lodges & Reserves are synonymous with luxury African safari experiences and have set the bar for excellence, service and personal attention to detail in the hospitality industry, which makes Travel Designer exceptionally proud to be one of their preferred operators in Cape Town.

During October 2017, we were invited to host their Head Chefs Andrew Nicholson, Dylan Pitallo, Paul Antolik, Bryan English and James Kenny from Singita’s lodges in Tanzania, Kenya, Zimbabwe, Kruger National Park and Sabi Sands who were in Cape Town for a strategy meeting. When their work was done they joined Ozzy and friends for a night of indulgent city spoils and flavours.

We started our time together at Bakoven Beach with our sustainable gangster and outdoor enthusiast Henk Brand, better known as The Secret Adventurer, for some “mussel hunting” and to taste his secret recipe, which was prepared right next to the sea. From there we had time at our hidden sunset spot to meet our master mixologist Marshall – who undoubtedly prepares the best drink in town – for handcrafted G&T’s enjoyed in style.

Once the sun had set and we’d collected for another cocktail at House of Machines in the heart of the city, the place where the cool kids meet, we made our way to a private dinner with Masterchef SA and Jazz Musician Jade De Waal at Mama Doreen’s House.

Jade prepared a beautiful selection of fine food that the Chefs knew to appreciate and feast on, but it wasn’t all relaxation. They were also encouraged to help cook their own dinner, or Food Jam, as we prefer to call it.

Also at the dinner adding to the magic was Simone Musgrave, creator of Musgrave Gin, who explained how she began the Musgrave journey and offered insight into the distilling process and most importantly, showed us how to best enjoy the delicious drink. Musgrave Gin is no ordinary spirit – it is an artisan gin celebrated for its top notes of Cardamom, African Ginger and Grains of Paradise.

Once the flavours had been savoured and the meal enjoyed, 2012 and 2016 South African barista champion Wayne Oberholzer, who is the founder of the coffee consultancy company The Portland Project, prepared a round of coffee, which was the perfect way to bring an end to the amazing evening shared. Wayne also talked us through his career that has seen him work in some of the best coffee companies in the country and beyond.

Sharing the evening with us was the Slow Food Youth Network Zayaan Khan, who believes that food is not just what we put on the table: it is the central point of transformation.

The time together was a definite highlight for the Chefs and for Travel Designer who had the privilege of hosting them for a mix of animated discussion, delicious flavours, passionate people and beautiful places. We could not have asked for more.
